White Truffle Glazed Carrots

Melt-in-your-mouth carrots rich with white truffle flavor, a touch of brown sugar, and a crunch of flaky salt. An easy side dish that’s perfect for entertaining!

Ingredients

  • 2 lbs carrots
  • 1 (3.5 oz) tub Epicurean Butter White Truffle Flavored Butter
  • ¼ cup light or dark brown sugar
  • salt and freshly ground pepper
  • 1 Tbsp chopped parsley, for garnish
  • 1 Tbsp coarse sea salt, for garnish, such as Maldon

Directions

  1. Peel carrots and slice into 1-inch coins if large, or leave whole if thin.
  2. Place carrots in a large saucepan or Dutch oven and cover with water. Bring to a boil, reduce heat, and simmer until just starting to get tender, about 8–10 minutes. Drain and return carrots to the pan.
  3. Add White Truffle Flavored Butter, brown sugar, and a sprinkle of salt and pepper. Cook over medium heat for 4–5 minutes until the carrots are tender and nicely glazed.
  4. Transfer carrots to a serving dish and drizzle with the remaining glaze.
  5. Sprinkle with coarse salt and parsley, and serve immediately.
